In this episode Shiuwen and Noah drink a very fresh batch of Dong Ding oolong. We talk about the feeling of when an oolong tea is "open", similar to letting a wine breathe or setting steak to cure. Dong Ding is one of our very favorite teas, and it was really fun to see how much it had changed since it first arrived.
