We will explore the history and processing of Dong Ding through experience of good (and bad, for comparison) Dong Ding oolongs. We will taste tea grown by a farmer Shiuwen has worked with for ten years. We will also taste Dong Ding that has been traditionally charcoal roasted by Master Zhan, the subject of her documentary. His ability with tea has been a major inspiration for Shiuwen's tea journey. We will also taste modern style dong ding, and a few aged Dong Ding oolongs.
